Winter out in the Pasture
Up until last week, the winter had been extremely warm and the cows were still grazing on the residual grass still thick in the pastures. We have one more 25 acre paddock for them to graze down before we’ll have to start feeding hay. Here the calves and Farmer Keith are mulling over the situation, as if snow actually sticking to the ground makes the calves wonder if their hay rings will be available earlier.
We are adding some new hog breeding stock. These are heritage breed, Red Waddle hogs. Being a heritage breed means that Red Waddles are a threatened breed, with fewer than 1000 registered each year. They were first brought to New Orleans in the 18th century by way of New Caledonia. They quickly began to populate the swampy areas in East Texas and, like the Longhorns, were gathered up and taken to the slaughter houses in Chicago to feed a growing nation.
Characterized by their ability to thrive on pasture and woodlots, these quick growing animals produce some of the best tasting pork out there. Their meat takes on a slightly red tint, is well marbled, and has a deliciously succulent taste.
