The ranch steak is a little known but tasty cut of beef. These smaller and leaner steaks have a meaty flavor and a silky texture that’s a pleasure to eat. What it lacks in tenderness, it makes up for in its really big beef flavor, making it a favorite of those liking a bold taste.
It’s a versatile cut that can be cooked like a traditional steak and can also be used as a substitute for flat iron and sirloin tip steaks. These lean steaks lack the marbling of premium steaks and they shouldn’t be cooked past medium or they’ll become chewy. Often times these steaks have a very thin line of sinew running through the middle of the meat that can’t be cut out during processing and has to be eaten around during a meal.
