Bristol Bay sockeye is known by connoisseurs as home of the best
tasting salmon in the world and sold only to select restaurants serving
the most mild flavored salmon with the deepest red coloring.

Wild Alaskan King Salmon (also called Chinook) is the largest and most
rich flavored of all the species of wild salmon. It has the highest oil and
healthy omega-3 content and is prized for its buttery flavor and texture.
These hand cut portions come individually vacuum packed weighing
approximately 6-10 oz. depending on the size of the fish.

Alaska cod is the benchmark by which all other whitefish is compared.
Know for its snow-white, pearlescent flesh and gentle but distinctive
flavor. Alaska cod has a mild, savory flavor profile accompanied by

Red snapper is a fine textured, mild white meat with a distinctive sweet
flavor. Snapper is a versatile fish that can be sautéed, baked, roasted,
grilled, fried, and broiled. Bake it with lemons, butter, and some fresh
herbs and you have the perfect family dish!

Cooked Flounder is pure white, lean, boneless, flaky and prized for

to sweet. To sauté a ½ inch thick filet only takes 2 to three minutes per
side.  To bake a flounder fillet takes 5 minutes at 350 degrees. When the
fish just starts to flake at the thick end when tested with a fork, it is
done. For the perfect recipe use mild seasonings such as better, lemon,
and dill weed, as flounder is very mild.

Grouper is a firm textured, white meat fish with large flakes. It has a
distinctive, yet mild flavor. It is nutritious and delicious. Grouper is a
versatile fish that can be grilled, fried, sautéed, poached, baked, broiled,
and steamed. Bake it for 5-7 minutes in a baking dish with oil, butter,
lemon juice, ginger, salt and pepper and you will have the PERFECT
crowd pleaser!

Pompano are extremely fresh due to how quickly they are landed, chill-
killed, and brought to shore. Florida pompano has a succulent,
moderately fat flesh with a mild, delicate flavor. Pompano is considered
a premium fish. The fine-textured meat ranges from white to off-white
and tastes almost sweet.

that’s perfect for the chef because it gives him an endless array of recipe

Impress your guests with a dressed trout. Easier to cook than you think,
dressed trout still have the bones that add flavor to our already buttery
trout. Stuff it with herbs and spices and grill it in your favorite pan, in
the oven, or on the grill. Don’t worry about the bones, once cooked the
tender meat flakes right off. You won’t even know they are there.

Pastrami Style Cold Smoked Rainbow trout

Using a dry brine along with our cold smoking technique we are able to
achieve a buttery, delicate taste with our cold smoked rainbow trout.
Now add pastrami spices of peppercorns, coriander and mustard seed
before smoking and you truly having something unique!
Our pastrami style cold smoked is paired well with bagels and cream
cheese, on a salad for a little something extra, or just by itself for a
flavor profile you are used to tasting on your favorite deli sandwich.

smoker, our trout is of the highest quality. Buttery smooth, we use a dry
brine along with our cold smoking technique to achieve a truly delicate

Hickory Smoked Trout Fillets
Portion Cut – Approximately 5oz. each.
Our Hickory Smoked Fillets come from the plumpest part of the fillet,
the loin. They are slowly smoked for 7 hours in our hot smoker to
produce a succulent, tender, and slightly smoky fillet. Each fillet comes
individually packed in portions approximately 5oz., and are ready to eat.
We recommend serving at room temperature for the subtle oils and

meat. After some extensive research and talking with a number of local fishermen, we decided to
partner with Cool Fish Seafood in Niceville, FL. Our education was thorough and as always it
was very disappointing to learn that almost all gulf seafood is sold through brokers and resellers.
There is virtually no traceability, mislabeling is rampant, and the advertising is often deceptive.
So we went straight to the source—the fishermen, and you can trust that their products are fresh,
clean, and what you order is exactly what you’re getting.
